Basil and quinoa patties

Prep time:     10 minutes

Cook time:    20 minutes

Makes 8 – 10 patties


400 g cooked organic quinoa* 3 cloves garlic
4 eggs 1 small white onion
½ tsp salt 90 g breadcrumbs
Handful chopped fresh basil 1 – 3 tbsp olive oil
Parmesan cheese, grated

*About 100 g uncooked quinoa yields 400 g cooked quinoa


  1. Beat the eggs in a bowl
  2. Add the cooked quinoa and salt
  3. Chop the onion and garlic finely and add to the mixture
  4. Add the chopped basil and cheese and stir until evenly mixed
  5. Add the breadcrumbs and let stand so to the crumbs absorb some of the moisture – it should be easy to form balls without them falling apart – add more breadcrumbs as necessary
  6. Form the mixture into patties, each about 1 ½ cm thick
  7. Heat the olive oil in a pan over a medium heat and cook the patties in batches until golden brown and crispy
  8. Place the cooked patties on a paper towel to drain the excess oil
  9. Serve and enjoy!
