Chocolate quinoa brownies

175 g chocolate (>70% cocoa) ½ tsp salt
115 g butter 2 tbsp cornflour
280 g soft brown sugar 30 g organic cacao powder
3 medium eggs 120 g chopped pecans
190 g organic quinoa, cooked 1 tbsp organic maca powder
1 tsp vanilla paste


  1. Preheat the oven to 1800C / Gas Mark 4. Line and grease a 20cm square tin
  2. Melt the chocolate and butter in a bowl over a pan of simmering water, stirring frequently. Then add the sugar and stir vigorously
  3. Mix the eggs, cooked quinoa, vanilla and salt in another bowl. Sift in the cornflour, cacao and maca powder and stir until smooth
  4. Combine the two mixtures and stir until shiny and smooth, mix in the chopped nuts, pour into the tin and bake for 45 minutes
  5. Remove from the oven and leave to cool for 10 minutes before lifting out and placing on a cooling rack
  6. Carefully cut with a knife dipped in hot water and enjoy!

Super Cholo tip – try adding raisins or for a sweet tooth, add macadamia nuts and mini marshmallows!

Festive twist – add cranberries and decorate with a sprig of mistletoe!
