Its highly prized nutritious flesh is dried at low temperatures, and then ground into a powder that can be used as a mild sweetener. This beta-carotene powerhouse has a low glycaemic index (GI) rating and is rich in vitamin B3 which contributes to energy production. It is also thought to contain wound-healing and anti-aging properties as well as antimicrobial and antibacterial properties.
