Quinoa pizza

Prep time:     20 minutes

Cook time:    45 minutes

Serves 2


For the base:

150 g uncooked quinoa (soaked) 1 tsp baking powder
60 ml water ½ tsp salt
1 egg 2 tbsp olive oil

For the toppings:

1 clove garlic, finely chopped 1 tsp dried oregano
½ tin chopped tomatoes Salt and pepper for seasoning
1 tbsp tomato puree



Before you start….soak the quinoa for 8 hours, or overnight!

  1. Preheat the oven to 2200C (Gas mark 7) and line a 23 cm tart or cake tin with baking paper
  2. Put all of the pizza base ingredients in a liquidizer and blend on high until the mixture resembles a thick pancake batter
  3. Pour this batter into the prepared tin and bake for 30 minutes until crisp and set firm. Once the base is ready, slide it onto a greased pizza tray
  4. Meanwhile, gently heat the olive oil in a pan. Add the chopped garlic and gently fry for 1 minute. Add the chopped tomatoes and tomato puree, oregano simmer for 5 minutes. Season with salt a pepper and add a splash of Worcestershire sauce if it takes your fancy
  5. To assemble the pizza, spoon the tomato mixture over the base and add the toppings of your choice and bake for 10-15 minutes until the topping is hot!
