Vanilla and honey amaranth porridge

Cook time:    30 mins

Serves 2



100 g organic amaranth 1 vanilla pod
100ml boiled water Pinch of salt
300ml milk of your choice Honey/maple syrup/agave syrup


  1. Combine the amaranth, water and milk in a small saucepan
  2. Cut the vanilla pod in half and scrape the vanilla into the saucepan
  3. Bring to the boil, then reduce the heat, cover and simmer for 30 minutes. Remember to stir every now and then so the amaranth doesn’t stick to the pan
  4. Stir in the honey and a pinch of salt and stir vigorously until the porridge is creamy
  5. Remove from the heat and serve with your choice of toppings, we love to add blueberries and chopped nuts or sliced banana and cinnamon!
