VEGAN chocolate quinoa brownies

90 g chocolate (70% cocoa solids) ½ tsp salt
120 g soft brown sugar 1 ½ tbsp cornflour
120 g organic quinoa, cooked 20 g organic cacao powder
½ tsp vanilla paste 30 g chopped pecans
60 g coconut oil 1 tbsp organic maca powder
20 g agave syrup


  1. Preheat the oven to 1800C / Gas Mark 4. Line and grease a 20cm square tin
  2. Melt the chocolate in a bowl over a pan of simmering water. Then add the sugar and stir vigorously
  3. Blend the cooked quinoa, softened coconut oil, vanilla and salt in another bowl. Sift in the cornflour, cacao and maca powder and stir until smooth
  4. Combine the two mixtures and stir until shiny and smooth, mix in the chopped nuts, pour into the tin and bake for 35 minutes
  5. Remove from the oven and leave to cool before lifting out and placing on a cooling rack
  6. Carefully cut with a knife dipped in hot water and enjoy!

Super Cholo tip – try adding raisins or macadamia nuts!

Festive twist – add cranberries and decorate with a sprig of mistletoe!
